Am I Experiencing a Food Allergy? Throat mucus and LPR/GERD

Hi all-

I hope this is the right place to ask this question. I'm wondering if you could assist me in understanding if this could be a sign of a food allergy. 

Back in August I began noticing slight acid reflux. This was odd to me, as I've never dealt with it before. No matter how many tums I took, how much pepto I consumed, nor gaviscon I drank, the reflux didn't go away. I was able to manage it. Annoying? Yes. But I could live with it. 

I spoke with my physician about my symptoms (reflux, pain in my rib cage area, bloating, occasional diarrhea, painful gas, etc.). She determined it sounded like either GERD or gastritis and put me on Prilosec @ 20mg.

The Prilosec did nothing. In fact, a week into starting it I experienced a "flare" of symptoms after a night out at dinner. My entire rib cage felt so sore the next morning. My stomach was bloated and achy. I felt ill. Plus, I've had a choking, or globus, sensation that comes and goes in my throat. The other night I woke up in the middle of the night feeling like something was stuck in there (nothing was). That being said, I always feel my best right away in the morning. The globus sensation tends to get worse as the day goes along. I do not notice any specific food triggers. I have no clue how people can determine that. It seems like everything and anything can either be a trigger, or have zero impact.

I decided to take Zyrtec as a hail mary of sorts yesterday, and noticed a drastic improvement in my symptoms. Was the choking feeling still there a bit? Yep. But it made a difference. In fact, I felt totally normal this morning for like a whole hour!!! Yesterday I was able to get productive coughs up that brought mucus with it, which has never happened before.

All testing (ultrasound, xray, and celiac panel) has come back normal, which is good! But still doesn't help me understand WTF is going on.
